Spanish researchers conducted a study that analyzed the carbon footprints of the diets of the United States, the United Kingdom and Spain. Results of the study show Spanish cuisine, a Mediterranean cuisine, to be an excellent choice for ecological sustainability. The main variant that influenced the results was the amount of beef being eaten. The people of Spain eat much less beef than those in the United States or the United Kingdom. The findings were published in The Journal of Health Services Research & Policy and reinforce the findings of previous studies.
