Sometimes I pop into the kitchen with only a sliver of a cooking idea and build from there. As of late, I’ve been creating surprising new dishes for roasting. For example, I made roasted tofu a couple of months ago and we ate roasted tofu for weeks.

My newest roasting idea started with a craving for black eyed beans. I despised these beans as a small child, but have now grown to love them, especially after trying some Greek and Portuguese black bean recipes.

This dish is a happy collision of Italian and Greek cooking. I recommend this dish served with roasted vegetables, our Greek salad and crusty bread.
