Harcha (Moroccan Semolina Biscuits)

Ingredients
  

  • 2 cups fine semolina
  • 1 tsp baking powder
  • 1/2 tsp salt
  • 1/2 cup extra virgin olive oil
  • 1/2-1 cup water

Instructions
 

  • Add the semolina, baking powder and salt to a food processor or blender. Mix until incorporated.
  • Slowly drizzle in olive oil while food processor is on low. With the food processor still on low, slowly drizzle in water just until the mixture turns from chunky to a smooth dough. Turn off as soon as dough consistency is achieved. Let mixture sit for half an hour.
  • Let mixture sit for at least 10 minutes and up to 30 minutes.
  • Make patties from the dough, about the height and width of an English muffin.
  • Heat up a skillet on low-medium. Add the patties and cook on each side until browned (about 5 minutes on each side).
