Instant Pot Beef Stew with Sage and Red Wine (Italy)

- 1 tbsp extra virgin olive oil
- 1 1/2 pounds stew beef, cut into bite sized pieces
- 1/2 tsp salt
- 1 tsp black pepper
- 1/2 tsp sage
- 1 tsp thyme
- 1 red pepper, chopped
- 4 small potatoes cubed into bite sized pieces or 2 large potatoes
- 2 zucchini, sliced thin
- 10 ounces mushrooms
- 1 1/2 cup water
- 1 1/2 cup red wine
While you are preparing ingredients, put instant pot on "Saute".
Remove lid, add olive oil and add stew beef. Saute until browned on all sides.
Add rest of ingredients. Stir well and cover with lid.
Set Instant Pot on “Manual” for 20 minutes. Make sure valve is on “sealed”.
Open vent and once steam has vented, open Instant Pot and serve.
