Zucchini and Onion Omelet (Greek Island of Crete)

Ingredients
  

  • 1 pound zucchini, cut into 1 inch slices
  • 1 cup extra virgin olive oil
  • 1 cup onions, shredded
  • 1 cup parsley leaves, chopped
  • 3 fresh tomatoes, grated
  • salt and pepper, to taste
  • 4 eggs

Instructions
 

  • Add zucchini, olive oil, onions, parsley, tomatoes and 1 cup of water to a small pot. Simmer for 20 minutes and salt and pepper to taste.
  • Beat the eggs and add to the pot. Cook for an additional 10 minutes.
