Ingredients
  

For the Batter:

  • 1 cup chickpea flour
  • 1 cup warm water
  • 2 tablespoons extra virgin olive oil
  • 1/2 teaspoon salt

For the skillet:

  • 1/4 cup extra virgin olive oil
  • freshly ground black pepper

Instructions
 

  • Mix the Batter: In a medium bowl, whisk together the chickpea flour, warm water, 2 tablespoons olive oil, and salt until smooth. Let the batter rest at room temperature for 30 minutes.
  • Preheat the Oven and Skillet: Preheat the oven to 450°F. Place an 8-inch cast iron skillet in the oven while it preheats.
  • Add Oil and Batter: Carefully remove the hot skillet from the oven. Add ¼ cup olive oil, swirling to coat the bottom evenly. Immediately pour in the batter and tilt the pan so it spreads evenly.
  • Bake: Return the skillet to the oven and bake for 20–25 minutes, until the edges are crispy and the center is set.
  • Serve: Cut into wedges, sprinkle with freshly ground black pepper, and serve hot.
