Ingredients
  

  • 2 teaspoons sesame seeds, toasted
  • 2 tablespoons extra virgin olive oil
  • 3 tablespoons apple cider vinegar
  • 1/2 cup tahini
  • 2 tablespoons soy sauce
  • 2 tablespoons freshly squeezed lemon juice
  • 1/2 teaspoon salt
  • 3 cloves garlic
  • 2 teaspoons dried parsley

Instructions
 

  • Toast the sesame seeds: Preheat a small sauté pan over medium-low heat. Add the sesame seeds and cook, stirring occasionally, for 3 to 5 minutes, or until golden brown and fragrant. Watch closely, as sesame seeds can burn quickly. Transfer the toasted sesame seeds to a small bowl and let them cool.
  • Combine the dressing ingredients: While the sesame seeds cool, add the olive oil, vinegar, tahini, soy sauce, lemon juice, salt, and garlic to a blender.
  • Blend the dressing: Add the cooled sesame seeds and dried parsley to the blender. Blend until smooth and creamy.
  • Taste and store: Taste the dressing and adjust the seasoning if needed. Transfer to a jar and refrigerate for up to 1 week.
