Tuna Patties Fried in Olive Oil (France)

Ingredients
  

  • 2-7 ounces cans tuna
  • 1/3 cup bread crumbs
  • 2 shallots, chopped
  • 1 tbsp parsley, chopped
  • 3 tbsp chives, chopped
  • 1 tbsp scallions, chopped
  • 1/3 cup parmesan, grated
  • 1/3 cup all purpose flour + 2 Tablespoons
  • 1 tbsp sour cream
  • 1 egg
  • Salt and pepper, to taste
  • 2 tbsp extra virgin olive oil

Instructions
 

  • Drain the tuna and place it in a bowl, add all the ingredients except the 2 tbsp of flour and the olive oil. Mix well.
  • Place the 2 Tablespoons of flour on a small plate. Form medium patties, place them in the flour and cover them lightly with it.
  • Heat a frying pan on medium heat and add the olive oil. Cook the patties about 7 minutes on each side until lightly brown.
