Add blueberries, water, maple syrup, zest and a small pinch of salt to a saucepan.
On a medium heat, bring blueberry mixture to a boil. Be careful not to bring heat too high as you don't want maple syrup to caramelize. Simmer so that they stay on a low boil for about 10 minutes. The longer you simmer, the thicker the sauce becomes. Using a spoon, pop any blueberries that haven't popped on their own. Remove lemon strips and stir in lemon juice.
