Honey Walnut Salad with Feta and Raisins

Ingredients
  

  • 1 cup walnuts
  • 2 tbsp honey
  • 1 1/2 pounds baby spinach
  • 4 ounces crumbled feta cheese
  • 1/2 cup craisins or raisins
  • 1 apple, chopped
  • 1 cup  honey walnuts
  • 1/2 cup olive oil
  • 1 tbsp honey
  • 2 tbsp cranberry juice
  • 2 tbsp rice vinegar
  • 2 tbsp Dijon mustard
  • salt and pepper to taste

Instructions
 

  • Preheat oven to 325 degrees F. Coat walnuts with 2 Tablespoons honey in pie pan. Bake for 10 min. Cool.
  • Combine salad ingredients (including cooled honey walnuts).
  • Add all dressing ingredients to a jar. Shake. Pour dressing over salad, toss and serve.
