Mediterranean Fried Chicken with Asparagus and Tomatoes

Ingredients
  

  • 4 cups cherry tomatoes
  • 1 pound asparagus, stems cut or snapped
  • 4 cloves garlic, chopped
  • 2  onions, quartered
  • 1/4 cup extra virgin olive oil
  • 1 tsp oregano
  • 1/2 tsp salt
  • 1 1/2 pounds chicken tenders
  • 3/4 cup parmesan, grated
  • 3/4 cup bread crumbs
  • 1 tsp smoked paprika
  • 1 tsp black pepper, ground
  • 1-2 eggs

Instructions
 

  • Preheat oven to 350 degrees F.
  • Add tomatoes, asparagus, garlic, onions, olive oil, oregano and salt to a bowl. Mix well, making sure that all veggies are coated with oil and spices. Fill a sheet pan with the veggies.
  • Add bread crumbs, smoked paprika and black pepper into a bowl. Mix with a fork.
  • Break an egg into another small bowl. Whip with a fork.
  • Dip each chicken tender into egg and then coat well with bread crumbs. Add tenders on top of veggies in sheet pan.
  • Bake for 30-40 minutes until tenders are golden brown on the outside and done in the middle and veggies are beginning to caramelize.
