Artichokes, Green Peas, and Potatoes

Ingredients
  

  • 1 pound artichoke hearts, fresh or canned (drained)
  • 4 green onions, chopped
  • 2 carrots, peeled and sliced into thin rounds
  • 1/2 cup extra virgin olive oil 
  • 1/2 cup dill, stems removed and chopped
  • 2-3 medium potatoes, cut in 1/4's
  • 1/2 cup fresh lemon juice
  • 2 cups water
  • 2 cups green peas
  • 1 tbsp corn starch
  • Salt and pepper, to taste

Instructions
 

  • In a medium pot, saute artichokes, onions, and carrots in olive oil for 5 minutes.
  • Add the dill, potatoes, lemon juice and 2 cups water. Simmer for 20 minutes. Add peas and simmer for 10 more minutes. Salt and pepper to taste.
  • When potatoes are done put corn starch in a bowl with a small amount of water (1/4 cup). Beat for 2 minutes and then add to the artichokes. Let it boil for 2 minutes.
