Pumpkin with Rosemary and Cinnamon (Greek island of Crete)

Ingredients
  

  • 1/2 cup extra virgin olive oil 
  • 2 pounds pumpkin, peeled, de-seeded and cubed
  • 1 cup onions, grated or minced
  • 2 tbsp  fresh rosemary 
  • 1 cinnamon stick
  • salt and pepper, to taste
  • 1/2 cup water

Instructions
 

  • Heat olive oil on in pot on medium. Add pumpkin and saute for 2 minutes.
  • Add onions and rosemary. Saute for 2 minutes. Add cinnamon stick, salt and pepper, mix well.
  • Add water and simmer (low boil) for 20 minutes, stirring occasionally. Salt and pepper, to taste.
