Ingredients
  

  • 5 tablespoons extra virgin olive oil
  • 1 pound asparagus, cut into 2 inch pieces
  • 1 tomato, cubed
  • 6 eggs
  • 1/4 teaspoon salt
  • 1/4 teaspoon freshly ground black pepper
  • 1/2 cup whole milk
  • 1/2 cup feta cheese, crumbled

Instructions
 

  • Preheat the Oven: Preheat the oven to 350°F.
  • Sauté the Asparagus: Heat the olive oil in an oven-safe frying pan over medium heat. Add the asparagus and cook it for 3 minutes, until it begins to soften.
  • Prepare the Egg Mixture: In a bowl, beat together the tomato, eggs, salt, black pepper, and milk until well combined.
  • Cook the Eggs: Pour the egg mixture into the skillet with the asparagus and cook it for 3 minutes, until it just begins to set.
  • Add the Cheese: Sprinkle the crumbled feta cheese evenly over the top.
  • Bake: Transfer the skillet to the oven and bake for 10 minutes, until the eggs are fully set.
  • Serve: Remove from the oven and serve warm.
