  • 1 pound lean pork, cut into bite-sized cubes
  • 1 large onion, chopped
  • 1/2 cup extra virgin olive oil
  • 2 carrots, sliced thin
  • 2 celery sticks, sliced thin
  • 2 fresh tomatoes, grated or 2 cups canned crushed tomatoes
  • 2 cups canned crushed tomatoes
  • 1 pound green beans (fresh or frozen)
  • 2 potatoes, peeled and cut into 4 quarters
  • 1/2 tsp salt
  • 1/2 tsp black pepper

  • If using fresh green beans, snap off ends. Cut the onions, carrots, celery, and potatoes.
  • Turn the Instant Pot to saute and pour in the extra virgin olive oil. Once the oil is heated, add the pork and saute for 5 minutes.
  • Add the rest of the ingredients to your Instant Pot and stir very well. You won't have a second chance to stir until the food is fully cooked so stir well now.
  • Cover the Instant Pot and make sure the valve is set to sealing.
  • Press the manual setting and set to 17 minutes. The Instant Pot should say "On" at this point. This means it is heating up and in a few minutes the timer will start counting down.
  • Once the timer reaches zero, put on an oven mitt and turn the valve to venting. Wait for all the pressure to be released and remove the cover.
  • Serve and enjoy!
