Chicken and Chickpea Salad with Fresh Basil Dressing (Greek Island of Crete)

Ingredients
  

Dressing:

  • 1 cup extra virgin olive oil 
  • 1/4 cup lemon juice freshly squeezed
  • 3 cloves garlic, mashed
  • 1 bunch fresh basil, chopped
  • 2 tbsp mustard
  • Salt and pepper (to taste) 

Salad:

  • 1 pound poached chicken breast, cubed
  • 28 ounces can garbanzo beans, drained and rinsed
  • 10 walnuts, halved
  • 10 cherry tomatoes
  • 10 black olives, pitted
  • 6 sundried tomatoes, chopped
  • 1 head romaine lettuce, chopped

Instructions
 

  • Combine all ingredients for dressing in a bowl. Mix well.
  • Add all salad ingredients in another bowl. Add preferred amount of dressing. Mix well and serve.
