- 2 tablespoons extra virgin olive oil
- 1/2 onion, diced
- 1/2 pound asparagus, cut into 2 inch pieces
- 1/2 teaspoon salt
- 1/4 teaspoon freshly ground black pepper
- 3 eggs, lightly whisked
Heat the Oil: Heat the olive oil in a skillet over medium heat.
Sauté the Onion: Add the onion and cook for 2 to 3 minutes, until it begins to soften.
Cook the Asparagus: Add the asparagus, salt, and black pepper. Sauté for 3 to 5 minutes, until the asparagus is just tender.
Add the Eggs: Pour in the whisked eggs and cook, stirring constantly for about 30 seconds, until the eggs are just set.
Serve: Remove from the heat and serve immediately.
