This grilled corn recipe goes with the Green Tahini Sauce.
Grilled corn is one of my favorite summer vegetables to grill. There’s nothing like that charred flavor on fresh sweet corn. You know it’s summer when you’re eating grilled corn. Some people grill corn in the husks and I really just can’t understand them. Why not just steam it at that point? I want the corn to have that smokey grilled flavor if I’m going to bother grilling it. What I also love about grilled corn is how many different ways you can kick it up a notch. A little herb garlic butter or herb garlic olive oil are classic ways to add more flavor to grilled corn. Sprinkling different cheeses on the finished grilled corn hot off the grill is another delicious method. I’ve also heard of people spreading different mayos and aiolis on like chipotle mayo, or garlic aioli. All of these are delicious but I wanted to try a healthy sauce that’s colorful and hasn’t been used on corn before.
When I saw a green tahini sauce in Yotam Ottolenghi’s new cookbook, I decided to try my own version. There’s actually a funny story about this recipe. When I was shopping for the tahini paste I asked three different employees in the supermarket where the tahini is. None of them had ever even heard of tahini! This made me realize the world needs to have this recipe because tahini is so underrated! It’s a lot like peanut butter in consistency and flavor, and who doesn’t like peanut butter?!
Because I used cilantro and lime in the recipe, I immediately thought of how they would go well with grilled corn. The green tahini sauce would also go great on a grilled chicken salad or even an omelette (recipe coming soon), but on the grilled corn, it’s heaven.
