We all know you love avocado toast. We’ve been testing avocado toast recipes lately and creating healthy Mediterranean versions. These are three of our favorite recipes we came up with. Two of these recipes are savory and one is sweet. They are all simple to make, but are also filling and nutritious Mediterranean breakfast recipes.
Avocado Toast with Smoked Salmon, Fresh Dill, and Capers
Gourmet has never been as simple as this Avocado Toast with Smoked Salmon, Fresh Dill and Capers! This is the perfect blend of flavors: salty capers and smoked salmon, tangy lemon juice, the crispy bite of red onions paired with creamy avocado and warm crunchy toast. This takes about 10 minutes to make and is ideal on the weekend when there is time to really savor the flavor. It is my favorite avocado toast recipe!
Avocado Toast with Caramelized Balsamic Onions
This is a ridiculously satisfying avocado toast recipe. It’s vegan and very filling and the fat from the avocado and extra virgin olive oil make for a rich taste. The sweetness of the caramelized onions creates a nice balance with the acidity from the balsamic vinegar. A tip for good avocado toast is to find good bread. I recommend finding a local bakery. Some of my favorite loaves of bread for avocado toast are sourdough, baguette, focaccia, olive bread, and fresh Italian bread.

Greek yogurt and honey is a breakfast that has been eaten by Greeks for a very long time. Thick tangy yogurt is amazing with honey. I have been eating yogurt and honey as a Mediterranean diet breakfast for many years. Lately, I have also been eating avocado toast for breakfast. Then I came up with an idea: why not combine yogurt and honey with avocado? Sweet Greek Avocado Toast! It turns out that the combo on toast is super delicious.
