The Mediterranean spice blend is a recipe from Yale’s Chase Sobelman. In order to make these oven fried potatoes, you need to make the Mediterranean spice blend first. This spice blend has some amazing flavors, like toasted cumin, smoked paprika, and sumac to name a few. These give that earthy, smokey, toasted flavor to everything you add it to. I’m obsessed with roasted potatoes with lots of extra virgin olive oil and I thought the Mediterranean spice blend would kick regular roasted potatoes up a notch.
The key with roasted potatoes is to roast them in lots of olive oil until they are crispy on the outside and soft on the inside. This takes some patience but it’s totally worth it. Using 1/2 cup of olive oil is pretty essential to this recipe. If you don’t use enough olive oil, the potatoes will stick to the pan. The olive oil mixed with the spice blend creates a beautiful crust on these potatoes.
These are a great side to serve with grilled or roasted meats. If you are vegan or vegetarian, you can serve these with a salad and you have a whole meal. For a dipping sauce, you can use whatever you like. For me though, I thought back to my weekend trip to Belgium. In Belgium, they serve their french fries with mayonnaise for dipping. I know it sounds weird, but it’s insanely delicious. It works perfectly with these potatoes too because they are crispy like french fries, and the spice blend with the mayo just work together.
