These eggplant recipes come from Greece, Italy and Lebanon, which have some of tastiest foods in the Mediterranean. Although the food from these countries can taste so different, they all revolve around similar ingredients – local vegetables, extra virgin olive oil and quality herbs and spices.

Mediterranean Eggplant Recipes

When it comes to Mediterranean vegetables, one of my favorites is eggplant. Eggplant can be breaded, fried, grilled and prepared in so many ways it is hard not to love it. Eggplant’s ability to absorb flavor makes it ideal for marinades and casseroles where the flavors of the ingredients all come together while baking.

We hope you enjoy these eggplant recipes and continue feeling amazing eating the tastiest and healthiest diet in the world!

7 Elegant Eggplant Dishes

1. Grilled Eggplant Parmigiana by Giorgia Fontana

Grilled Eggplant Parmigiana

When you travel to Naples, in southern Italy, one of the dishes that you absolutely have to try is eggplant Parmigiana. This traditional preparation is essentially a rich vegetable lasagna that uses eggplant slices in place of pasta and combines them with mozzarella cheese, tomato sauce and basil leaves. Basically, all the quintessential ingredients of classical Italian cuisine.

2. Melt in your Mouth Grilled Eggplant by George Zikos

Grilled Eggplant with Balsamic Marinade

This is by far the best grilled eggplant I’ve ever had. One night recently when the weather was perfect for grilling I had some eggplant, so I thought I’d make up a recipe. I accidentally added too much balsamic vinegar which ended up being a blessing in disguise.

5. Eggplant Casserole by Diane Kochilas

Soufico is arguably the best-known dish on Ikaria, the one recipe that almost everyone on the island cites as being completely unique to the place. And yet, its origins are unclear. It belongs to the general category of Mediterranean dishes, from ratatouille to caponata, where the roster of summer vegetables-eggplants, zucchini, peppers, and tomatoes – works so harmoniously together in one pot.

Baba Ganoush: Mediterranean Diet Recipes

This eggplant dip is smokey, earthy, and garlicky. The process of making Baba Ganoush is very similar to hummus in that you blend everything up in a food processor until your desired consistency.

“This program is a way of life, one which I have adopted successfully, and more importantly one which I have sustained for over one year now. My weight remains steady at 160 pounds (down from 216). My energy levels rival that of someone 20 years younger than me (I’m now 57), enabling me to exercise in any way that I desire, from lifting weights to intense cardio sessions.”
— Michael Little

“After completing my 10-week program, I had a regularly-scheduled appointment with my doctor. Because my cholesterol has always been above the normal range (229 last year) I requested that she test it again this year. I’m happy to report that my total cholesterol dropped to 169, which is in the normal range, and all my other numbers improved as well.”
