When it comes to Mediterranean vegetables, one of my favorites is eggplant. Eggplant can be breaded, fried, grilled and prepared in so many ways it is hard not to love it. Eggplant’s ability to absorb flavor makes it ideal for marinades and casseroles where the flavors of the ingredients all come together while baking. These eggplant recipes come from Greece, Italy and Lebanon, which have some of tastiest foods in the Mediterranean. Although the food from these countries can taste so different, they all revolve around similar ingredients – local vegetables, extra virgin olive oil and quality herbs and spices.
