Honey Walnut Salad with Feta and Raisins

This honey walnut salad is one of my favorite salads to make because of its combo of tangy and sweet flavors.  Eat this when you want to have a complete meal that will give you lots of energy or as a side dish packed with vital nutrients.  The roasted honey walnuts give this salad an amazing crunch.

Honey Walnut Salad

It is perfect for lunch or as a side for a simple meat, chicken, fish or bean meal.  At lunch time I will have a slice of bread with it.  It also goes great with soups such as:

Tuscan White Bean Soup with Sausage and Kale

Zucchini Basil Soup with Lemon

Chicken Leek Soup with White Wine

Lentil Soup with Olive Oil and Orange

Greek White Bean Soup with Orange Slices and Olive Oil.

Ingredients
  

  • 1 cup walnuts
  • 2 tbsp honey
  • 1 1/2 pounds baby spinach
  • 4 ounces crumbled feta cheese
  • 1/2 cup craisins or raisins
  • 1 apple, chopped
  • 1 cup  honey walnuts
  • 1/2 cup olive oil
  • 1 tbsp honey
  • 2 tbsp cranberry juice
  • 2 tbsp rice vinegar
  • 2 tbsp Dijon mustard
  • salt and pepper to taste

Instructions
 

  • Preheat oven to 325 degrees F. Coat walnuts with 2 Tablespoons honey in pie pan. Bake for 10 min. Cool.
  • Combine salad ingredients (including cooled honey walnuts).
  • Add all dressing ingredients to a jar. Shake. Pour dressing over salad, toss and serve.

    Hello, just did it for the lunch. It turned wonderful, I did not have cranberry juice. I discovered this website 3 days ago and I already prepared 2 salads. The other one is the one with blue cheese and honey vinaigrette. Regards from Romania. Cristiana ana

      Yes, of course. Just don’t add the dressing until you’re ready to eat.
