Almond Encrusted Honey Mustard Salmon

Ingredients
  

  • 1/4 cup honey
  • 1/4 cup Dijon mustard
  • 1 cup sliced almonds
  • 1 pound salmon filet
  • sea salt
  • 1 tsp extra virgin olive oil
  • 1 tsp fresh squeezed lemon juice

Instructions
 

  • Preheat oven to 375 degrees F.
  • In a bowl, mix honey and mustard. Add almonds and mix well.
  • Drizzle olive oil and lemon juice in bottom of a baking dish.
  • Place salmon filet in baking dish, skin down. Sprinkle filet with sea salt.
  • Spoon almond mixture on top of filet and spread to cover all of the salmon.
  • Bake uncovered for about 20 minutes or until salmon is flakey.
