This is a cool refreshing salad that takes only five minutes to prepare. The combination of cucumber and yogurt is really refreshing. In the summer I’m kind of known for making mojitos. Not only do I love fresh mint in mojitos, but I even add it to salads sometimes too lol! Fresh mint is the perfect fresh herb for this salad, but fresh dill would also work.
This cucumber yogurt salad is kind of like a deconstructed tzatziki. If you’ve never had tzatziki before, it’s a cucumber yogurt sauce with dill, garlic, and extra virgin olive oil. It’s a must-have on the table during the summer in Greece. I didn’t include fresh garlic in this salad, however, because I think it’s a little overpowering for what I’m going for here.
Cucumber and yogurt are in a lot of recipes from my two different backgrounds, Greek and Armenian. Like I said, Greeks serve tzatziki with pretty much everything in the summer. Armenians make a very similar yogurt dip to tzatziki called “jujukh”. The main difference is that Armenians use mint instead of dill.
Even though Armenia isn’t on the Mediterranean sea, it has a very similar cuisine. Fruit and vegetables, whole grains, dairy, legumes, and extra virgin olive oil are staples of the Armenian diet. The climate is hot so cool and refreshing yogurt and cucumbers are a great way to stay cool.
